Here you can find recipes to various main dishes i've prepared in the past or have found to be unique in flavor and texture. Please enjoy what I have to offer at the moment. Later on in the future more will be added as I try more things. Remember that my recipes are not absolute and can be exchanged with other ingredients that are to your liking. Try experimenting a little.

 

Mexican Meatballs

Ingredients:

¼ Cup Finely Chopped Onions
1 Clove Garlic, minced
1 Teaspoon Olive Oil
1 Pound Lean Ground Beef
1/3 Cup Dry Bread Crumbs
1 Teaspoon Dry Mustard
¼ Teaspoon Pepper
2 Tablespoons Chopped Green Chilies

Sauce Ingredients:

1 Can (15 ounce) No-Salt-Added Tomato Sauce
1 Tablespoon Minced Parsley
¼ Teaspoon Chili Powder
½ Teaspoon Sugar
¼ Teaspoon Salt (optional)
¼ Teaspoon Ground Cumin

Preparation:

In small skillet, sauté onion and garlic in olive oil over medium heat until tender, about 5 minutes. In medium mixing bowl, add onion and garlic to remaining meatball ingredients. Mix well. Shape into 36 meatballs. In medium skillet, cook meatballs over medium heat until cooked through, stirring occasionally. Drain. Add sauce ingredients. Stir. Heat until mixture bubbles; cover. Reduce heat. Simmer for 10 minutes. 6 servings.
