Main Dish Recipe Journal

 

Here you can find recipes to various main dishes i've prepared in the past or have found to be unique in flavor and texture. Please enjoy what I have to offer at the moment. Later on in the future more will be added as I try more things. Remember that my recipes are not absolute and can be exchanged with other ingredients that are to your liking. Try experimenting a little.

 

Juicey Chicken Leg Quarters

Ingredients:

2 - 3 Leg Quarters ( May substitute with other chicken )
1 Stick Butter
Seasoned Salt
Garlic Powder
Limes ( Or Lime Juice )

Preparation:

Take your leg quarters ( thawed ) and clean them well. Then take a nice sized piece of foil and lay it over a nice sized cookie sheet/baking pan. Take another piece of foil and lay it on that one. Now take your leg quarters and lay them on the second sheet of foil. Take your stick of butter in one hand and rub butter all over the chicken until you have none left. Now take your garlic powder and lightly sprinkle garlic powder over the chicken. Now depending on whether your just using limes or lime juice. If your using limes then cut them up into fours and squeeze the juice over the chicken, including the limes on the side afterwards. If your just using the juice then just pour the juice over the chicken. Now wrap the chicken in the foil and place back on the cookie sheet/baking pan. Cook in the oven for 10 minutes on 375. Take the chicken out. Unwrap the chicken, draining any juices that may be present and throwing away the foil. Re-apply a new layer of foil over the cookie sheet/baking pan and re-lay the chicken on the sheet again. This time layer the chicken in Seasoned salt ( This really helps lock the juices in. ). Now return the chicken to the oven and let cook on 375 until meat is thorougly cooked or to your preference.
