Soups Recipe Journal

Here you can find recipes to various main dishes i've prepared in the past or have found to be unique in flavor and texture. Please enjoy what I have to offer at the moment. Later on in the future more will be added as I try more things. Remember that my recipes are not absolute and can be exchanged with other ingredients that are to your liking. Try experimenting a little.

French Onion Soup

Ingredients:

1/4 Cup Butter
6 Medium Cooking Onions ( Sliced )
1 Teaspoon Sugar
1 Tablespoon All Purpose Flour
1 Cup Dry White Wine
4 Cups Beef Broth
1/4 Teaspoon Pepper
6 - 1/2 Day Old French Bread
2 Cups Grated Swiss Cheese
1/2 Cup Grated Parasean Cheese
1 Paprika

Preparation:

In a large pot over medium heat, melt the butter. Add the onions and sugar. Cover and cook the 3 ingredients together stirring occasionally, for approximately 30 minutes or until onions are tender but not colored. Uncover, increasing the heat a little bit and continue to cook, continously stirring regularly until onions have a carmel color to them. This will take approximately 10 - 15 minutes. Next stir in the flour until well blended, gradually adding in the wine. Stir constantly until mixture boils and thickens. Stir in beef broth and pepper, bringing to a boil, reduce the heat to low. Cover and let simmer for 15 minutes, laddle soup into 6 1 1/2 cup oven proof bowls. Top each with bread slice, sprinkle with swiss cheese and paprika. Place bowls on jelly roll pan, or cookie sheet, broil until cheese melts and bubbles.
